I believe I can speak for us all when I say, With open arms and warm hearts we welcomed the wonderful snow storm we received for Christmas holidays!

Thanks to the 100cm of fresh over the last 7 days, we now have a spectacular base of 186cm of wonderful fluffy white snow.

Synopsis
Expect clearing skies this morning, then mainly dry through the day today. Clouds increase again in the afternoon though as the next weather system approaches. Heavy snow and gusty winds will be developing this evening.

Snow continues through the day Friday with strong winds at times. Freezing levels will be lowering through the day Friday.

Dry and cooler conditions are expected to return for the weekend.

19 cm of fresh snow on Whistler today, and a spectacular 63 cm yesterday! Pow all over the place, who wouldn’t want to be here.

So yesterday was opening day. Whistler is getting busier by the day.

We have tons of snow up here at Whistler Rv Park, and tons of snow in Whistler village. The village is packed with happy people and smiling faces, and the hill is swarmed with ecstatic skiers and snowboarders. What a wonderful start to a white weekend. Come on up and stay with us on this amazing weekend and get your fill of the white stuff aswell.

The day we have all been patiently waiting for has finally arrived. The snow is here! and its sticking. the slopes are all white, right down to the bottom, and the roads are slowly getting covered. How exciting.

For those of you who aren’t going to be outside all day and night, making snow angels, and frolicking in the snow, Here is a quick review of whats happening in the Whistler Blackcomb area tonight.

While casually cruising the internet today, I came across what I think looks like a delectable dinner recipe. Thoughtful me decided to share with everyone. Hope you like it.

Honey Mustard Chicken with Bacon and Mushroomshoney Sunday in Whistler
From your Everyday Home Cook

1 to 1 1/2 pounds boneless skinless chicken breasts
1/4 cup Dijon mustard
1/4 cup honey
1 teaspoon lemon juice
2 cups fresh mushrooms, sliced
8 to 12 slices bacon, partially cooked
1 cup grated cheddar cheese
1 tablespoon fresh parsley, chopped
Seasonings: salt, pepper, paprika

Make marinade by mixing together mustard, honey, and lemon juice.  Add chicken breasts and refrigerate for two hours.  Preheat oven to 350 degrees F.  Heat a small amount of oil (canola or vegetable) in a skillet and add chicken breasts, discarding marinade.  Cook chicken a few minutes on each side.  Set aside.  Scrape out most of the juices from the pan, and add mushrooms.  Saute mushrooms until tender (a few minutes).  Assemble chicken in a large baking dish: chicken, then bacon, then mushrooms, then cheese.  Bake at 350 degrees F for about 20 minutes, until chicken is cooked through.  Sprinkle with chopped parsley before serving.

Makes 3 to 4 servings.

Smoky Corn Chowder with Bacon by the Campfire!

Here’s how to enjoy a tasty lunch by the campfire today.

Smoky Corn Chowder with Bacon
Serves: 4
Prep: 15 min
Total: 45 min

Ingredients:
6 slices bacon, chopped
1 leek (white part only), finely chopped (or onion works too)
1 russet potato, finely chopped
2 cups frozen or canned corn kernels
1.5 cups chicken broth
1.5 cups milk
398-ml can creamed corn
1 sprig of thyme or 1/2 tsp dried thyme
1 bay leaf

Method:
Heat a large pot, add bacon & cook until crisp. Discard all but 1 tbsp of bacon fat. Add leek & saute until tender. Then add potato, corn, broth, milk, creamed corn, thyme & bay leaf. Bring to a boil, then reduce heat. Simmer uncovered, stirring occasionally, until potatoes are tender. Remove thyme & bay leaf before serving. Season with pepper.
